Also known as con AA sugar, the large crystal size of coarse sugar makes it highly resistant to color change or inversion (natural breakdown to fructose and glucose) at cooking and baking temperatures.Coarse sugar is much thicker than sanding sugar or table sugar. The grain size is similar to pretzel salt. Be sure to have plenty on hand for your baking needs.
